I love eggs. If I have eggs for breakfast I feel full for hours. No other breakfast has that effect. Eggs are the perfect protein. Eating loads of veggies also counterbalances the effects of a high-fat diet as the fiber helps remove excess cholesterol. Plus, cholesterol is crucial for the functioning of your cells and hormone production. So, eggs are the way to go if you want to start the day off on the right foot. A few safety tips however are appropriate. Don’t overcook the eggs as that changes the fat in them to become more harmful for your arteries. If you suffer from inflammatory conditions then limit your intake of egg yolks as the arachidonic acid in egg yolks can exacerbate inflammation. Also, aim for eggs from chickens that were allowed to roam freely. Whenever I buy eggs Upstate I can see a huge difference in the color of the yolks between those free-range chicken eggs and those that I buy in the city from the supermarket. The proof is in the color and the taste.
